    How to keep it and reheat it

    Sealed, at room temperature, 2 days. To keep it longer, slice it and freeze it — then toast straight from frozen, no thawing.

    Do not refrigerate. It goes stale faster in the fridge than on the counter.

    Saturday's almond croissants are made from Friday's croissants. That is what an almond croissant has always been. Every bakery that sells them does it this way; most just do not say so. A day-old croissant is soaked in syrup, filled with almond cream and baked again, and it comes out better than it started. We only use the ones that were still in good condition at Friday closing, and we only do it once a week.

Allergens

Our kitchen handles wheat, dairy, eggs, nuts and sesame — on the same benches and in the same oven. We can adjust some recipes on request, but we cannot promise an allergen-free product and we will not pretend otherwise. If an allergy is serious, please tell Mew before you order.

Keeping it, and bringing it back

Bread

Cake

Refrigerated. Out of the fridge 15 minutes before eating.

Buttercream must not sit in a parked car.

Phuket is hot and wet. Get it indoors as soon as you receive it. Cream cakes should not stay in a car. Croissants do not travel well in the heat for long. And on a wet day the courier will be slower than usual.
