Who makes it
Sunday Crumb is two people. Rin bakes. Mew runs the orders, the customers and everything else a day contains. We do not try to keep the shelf full from morning to evening, because the thing a small bakery has to control is not only cost — it is how fresh the food is when someone eats it.

The one rule
Baked for today, not for the shelf.
- Small batches
- What we bake is set by the pre-orders and by what the same weekday sold last week — not by a guess that fills the shelf.
- Honest ingredients
- Every item lists its main ingredients and its allergens — including the ones we cannot promise anything about.
- Less sweet
- Sweet enough to taste like what it is. Not sweetened to make the first bite louder.
- Order ahead
- Reserve a day ahead and you are not gambling — and we are not baking a surplus to throw away.
By half past one the shelf is nearly empty
By half past one most days the shelf has two croissants and one loaf left on it. That is not a bad day — it is the plan. We bake what we think today needs, and when it is gone we stop.
Whatever is still good at closing goes to the staff dormitory on the next street. It does not go back on the shelf tomorrow.

The 10:30 loaf
Wednesday, 10:30 — keep one sliced loaf for Khun Mali
A retired teacher on the next soi came in every Wednesday at half past ten for a sliced country loaf, and asked every single time whether there was any left. After a few months Mew stopped waiting to be asked and started holding one back. One Wednesday she did not come, and the loaf sat there until closing. The week after, she explained she had been in Bangkok with her daughter. Rin did not say anything; he just handed her the bag. The line is still in the order book.
A small bakery is not really selling bread. It is selling the confidence that tomorrow morning there will be a paper bag with your name already written on it.
